Almond Milk

This recipe is dedicated to my little sister @rafflalala who went on a insta stories tangent last night about her need for smaller batches of almond milk! Fear not, sister! Here’s my recipe for naturally sweetened, @whole30 approved almond milk that’s so easy to make even a 23 year old budding pop star can do it! Step by step directions in my stories and I talk into the camera for the first time ever (gasp!) (hope you don’t hate it). Here’s what you need:

Almond Milk

INGREDIENTS


1 cup almonds (or tree nut of your choice) 
4 cups purified water, plus more for soaking
2 medjool dates, pitted
2-3 pinches salt
*Blender
*Clean kitchen cloth, nut milk or produce bag
INSTRUCTION
1. Soak almonds in purified water over night in the fridge or for 2-4 hours in the counter
2. Drain and rinse nuts of soaking liquid. Soaking liquid absorbs anti-nutrients from the nuts - you do not want that in your milk.
3. Using a blender first add 4 cups water then nuts, dates and salt.
4. If using a high speed blender like a vitamix or ninja, start on low then gradually to high and blend for 1 minute. If using a regular blender, blend 2-3 minutes.
5. Taste for salt, sweetness and creaminess. Add more salt, dates or water if needed and blend another 30 seconds.
6. Place a strainer and dry clean cloth over a large bowl and pour almond mixture. Slowly and carefully squeeze liquid until only pulp remains. Transfer milk to jar or bottle and refrigerate up to 5 days!
