Gluten Free Pasta Salad

This pasta salad is famous amongst my friend group but I can’t take credit for it. It’s adapted from the queen Ina Garten so you know it’s amazing. It’s perfect for a get together, potluck or to meal prep for the week. It’s also equally delicious using chickpea Banza or quinoa pasta. Not paleo, no whole3 but fresh, bright and addicting, here’s what you need:

Gluten Free Pasta Salad

INGREDIENTS


One box of pasta of your choice, cooked + cooled
1 large cucumber, medium diced
1 pint cherry tomatoes, halved
1 chunk feta, small diced
1 cup grated parmesan 
1 cup kalamata olives, minced
Salt + Pepper


VINAIGRETTE 
1/3 cup olive oil
3 Tbs red wine Vinegar 1 large shallot, minced
1 Tsp honey 
Salt + Pepper


INSTRUCTIONS


1. In a mason jar mixed together all vinaigrette ingredients and shake well until emulsified.
2. In a large bowl mix together pasta, cucumbers, tomatoes, olives, shallots and feta cheese. Mix in vinaigrette. Mix in parmesan. Salt and pepper to taste.
