Whole30 Wonton Meatballs

Here it is, my most requested recipe to date, Whole30 wonton pork meatballs! But before I share, I’d just like to say how cool it is that some of you out there on the internet love and make my recipes! Strangers and friends alike, it sparks actual joy when one of you shares a recipe you’ve made of mine! So THANK YOU for supporting me in these little ways - in many ways it gave me the courage to make the move to California and pursue a career as a chef! These past six months at culinary school in the Bay have been so incredible and I have grown/improved so much. In fact, I’m finally confident enough to call myself a chef and not just a cook! I’m moving back to the East coast tomorrow (!) and can’t wait to officially set up shop catering/private cheffing/teaching and some other fun plans I have for the future! Until then, please enjoy this recipe - it’s super simple to make and you can always sub chicken or turkey if pork isn’t your jam! Here’s what you need:

Whole30 Wonton Meatballs

INGREDIENTS


2 lbs good quality ground pork
2 tbs coconut aminos 
2 Tsp salt
3 scallions, sliced thinly 
4 garlic cloves, minced 
1 Tsp toasted sesame oil
*1 Tsp Mushroom Powder (optional but gives an incredible boost of umami and Trader Joe’s sells it!)


INSTRUCTIONS 


1. Preheat oven to 400 F and like a baking sheet with parchment paper
2. In a large bowl mix all ingredients together using your best kitchen tool, clean hands, until well mixed. Using a large spoon or ice cream scoop, portion out even sized balls and gently roll/pack with your hands. Place on parchment making sure not to touch.
3. Bake for 20 minutes or until golden brown and internal temperature reaches 145 F. Enjoy!
