Sausage, Peppers and Onions
ITALIAN SAUSAGE PEPPERS AND ONIONS - peasant food at its finest! When I was a kid we had this every weekend along with pasta and gravy at my Italian grandparent’s house! As I got older I refined the recipe to make it more of my own - cooking the sausages and the veggies really well and developing lots of flavor. With only five ingredients (sausages, peppers, onions, olive oil and salt) this recipe could not be more simple
And is hard to mess up. Here’s what you need:
INGREDIENTS
4 links Italian sausage (pork, turkey, chicken or even vegan work!)
3 bell peppers (any color but green), thinly sliced
1 large onion, thinly sliced
Olive oil
INSTRUCTIONS
1. Heat a glug of olive oil in a large pot or le creuset in medium high heat. Once shimmering add sausage links and sear on both sides, 4-5 minutes each.
2. Let cool for 5 minutes and then slice 1” think slices on the bias.
3. On medium high heat add another glug or two of olive oil so it costs the pot. Add the sliced sausage back to the pot and fry until brown, about 7-8 minutes. Flip and fry until the aside is brown, 5-7 minutes. Remove from pot and set aside.
4. Turn heat to medium and add peppers and onions. Generously salt and stir, making sure you pick up all those yummy brown bits on the bottom of the pan. Continue cooking until onions and caramelized and peppers are softened, about 45 minutes, stirring occasionally.
5. Once peppers and onions are done add sausage back with another glug of olive oil. Turn heat to medium high and keep cooking til sausages are warmed through. Serve and enjoy!
