Crispy Za'atar Broken Chicken
What to do with rotisserie chicken to make it not boring! Last night in stories I talked about why I love buying organic rotisserie chicken and dressing it up to make a fun meal! Here’s just a couple reasons why I love rotisserie chickens:
-They’re cheaper than raw organic whole chickens! A chicken will usually run you $13-$16 but a rotisserie chicken is usually $10-$12!
-They’re already cooked AND so tender, making them perfect for a quick weeknight meal
-You get all those good bones to make future bone broth!
I have a bunch of ways I transform rotisserie chicken but this is def one of my favorites. Below is a rough recipe, but feel free to change the measurements to your likings. I served it with tahini, sautéed kale, millet and roasted butternut squash with a spicy herb knife salsa. Quick and easy weeknight meal at its finest. Here’s what you need:
INGREDIENTS
1 organic rotisserie chicken, bones and skin removed and shredded (dark and white meat)
1/4 olive oil, divided into 4 Tbs
1/4 cup za’atar, more or less to your liking, add 1 Tbs at a time
INSTRUCTIONS
1. In a cast iron or non stick pan heat 1 Tbs of olive oil, once oil is hot and shimmering add shredded chicken.
2. Let chicken crisp up, about 3 minutes, before mixing with tongs to make sure all the chicken gets some time to hang and crisp up on the bottom of the pan.
3. Once the chicken starts crisping up add your first Tbs of za’atar. Continue to add more until at your liking,
4. The chicken will absorb the oil and may start sticking the the pan, add more olive oil 1 Tbs at a time. This will help crisp all the chicken.
5. Once about half the chicken is browned and crisp remove from heat. Serve with grains or in a pita for a yummy sandwich!
