Pumpkin Spice Fat Balls

✨PUMPKIN SPICE FAT BALLS✨Fat balls are little energy balls made out of nuts and seeds that are high in protein and fat. They’re sweetened with dates and coconut butter and require only a food processor and freezer to make. AKA they’re super easy! I’ve been craving pumpkin spice 🎃 fat balls but couldn’t find one on the inter🕸 I liked so developed my own and they are crazy good! Like have to stop myself from eating the whole 🦇ch at once good! Here’s what you need:


INGREDIENTS
1 cup shredded coconut
4 medjool dates, pitted
1/2 cup raw cashews
1/3 cup raw almonds
1/4 cup raw pepitas
1/4 cup raw sunflower seeds
1 Tbs chia seeds
1/2 Tsp salt
1 Tbs pumpkin spice
2/3 cup pumpkin purée
1/2 cup coconut butter
1 Tbs filtered water or non-dairy milk
Tsp coconut oil, to rub on your hands to roll balls


INSTRUCTIONS
1. Add all dry ingredients into a food processor. Process until finely chopped and combined . You should be able to pinch it together and make a loose dough.
2. Add wet ingredients - pumpkin purée, coconut butter and liquid of your choice. Pulse until completely combined and a doughy ball forms. Taste and add more salt and pumpkin spice to your liking.
3. Grease your hands with coconut oil and roll into balls, size to your liking! Place on parchment lined baking sheet and freeze for one hour. Transfer to plastic bag and store in the freezer. Eat cold or at room temp.
