Grain Free Granola

Eating healthy is expensive! So I thought I'd start sharing recipes for basic snacks I try and make every week or so to keep my pantry stocked with healthy and affordable options - starting with my paleo grain free granola! I bought some grain free granola at Whole Foods recently and it was $12/Lbs! - That's ridiculous! For a small upfront investment I can buy bulk nuts and seeds and have enough ingredients to make at least four batches of this recipe.  Recipe yields about 5 cups and lasts about two weeks stored in a jar or Tupperware. You can also switch up the nuts and seeds to your preference! Here's what you need:

Grain Free Paleo Granola

3 cups unsweetened coconut flakes
1 1/2 cups chopped walnuts
1 cup raw pepitas
1/2 cup sesame seeds
1/2 cup sunflower seeds
1/4 cup hemp seeds
2 tbs chia seeds
1 tsp good salt
1/2 tsp cinnamon
1/2 cup honey
2 tbs avocado or coconut oil

INSTRUCTIONS

Preheat over to 300
In a large bowl mix seeds, walnuts + spices together.
In a small sauce pan, warm honey and oil on low heat until syrupy - about 1 to 2 minutes

Spread mixture on greased baking sheet
Cook for 25 minutes until just browned and crispy
Let cool then break apart and store!
