Paleo Apple Muffins

Blender Paleo Apple muffins! My very first paleo baking recipe! If you watch my stories you know how much I love paleo baked goods. They’re so simple to make and I can still have a sweet treat without the guilt! Plus when you make them yourself, they’re not $8 a pop! This recipe is completely from scratch but comes together easily in blender and the whole things takes about 30 minutes beginning to end. Makes 6 large muffins or 9 tiny. I suggest eating with a big hunk of nut butter. Here’s what you need:


Blender Paleo Apple Muffins

INGREDIENTS


2 small apples peeled and chopped
1/2 cup water 
1/4 cinnamon (for apples)
1 tbs maple syrup
Splash of vanilla 
4 eggs
1/4 cup coconut oil 
1/2 cup coconut flour
1 tsp cinnamon (for flour mixture) 
1 tsp baking soda 
1 tsp baking powder 
1/4 tsp salt
Optional: coconut sugar and more cinnamon for sprinkling!

INSTRUCTIONS


1. Preheat oven to 350 and grease muffin tin
2. In a small pot, cover apples with water and sprinkle cinnamon. Bring to boil and simmer until fork tender, about 7 minutes
3. Once cooked, drain excess cooking liquid and purée in blender
4. Add maple syrup, vanilla, eggs and coconut oil and blend until incorporated with apple sauce 
5. In a separate bowl mix coconut flour, cinnamon, baking powder, baking soda and salt. Add to blender and mix until fully incorporated with wet ingredients.
6. Pour batter into muffin tins, you will need a spatula to get every last bit. Once poured, I like to use a tooth pick to swirl the batter so the muffins bake nicely. I then sprinkle with coconut sugar and more cinnamon for an extra sweet topping.
7. Bake for 15-20 minutes and enjoy!
