Paleo Chicken Tenders

I am extremely excited because I have finally perfected my paleo chicken tender recipe! I don’t know about you but I’m am constantly craving chicken fingers. Been trying for months to make tender on the inside, toasted on the outside chicken tenders and it was just not working! Either the outside was browned and the inside dry or the inside juicy and the outside pale and sad. Then I read @kitchfix’a GENIUS @whole30 hot chicken recipe and it changed my life! His strategy is twofold: BRINE your chicken and PRE TOAST your almond flour! Now all my chicken tenders dreams have come true and I’m going to share the recipe with you! Here’s what you need:

Paleo Chicken Tenders

INGREDIENTS

ALMOND MIXTURE
2 cups almond flour
1 1/2 tsp salt
4 tsp nutritional yeast 
1/2 tsp onion powder 
1/4 tsp cayenne pepper 


1. Spread almond meal evenly out onto a baking sheet
2. Toast almond flour at 325 for 10-15 minutes, tossing once or twice, until light golden brown 
3. Remove from heat, let cooL, move to shallow bowl and add spices 


CHICKEN
2 lbs chicken tenders 
2 eggs beaten 


BRINE
4 tbs salt
4 cups water 


1. Boil water and dissolve salt salt. Let cool completely
2. Place chicken tenders in Tupperware and cover with cooled brine, cover and let sit in fridge for at least one hour 
3. Strain bringing liquid
4. Set up dredging station: Chicken tenders, egg wash, almond flour mix and a greased baking sheet 
5. Dip your chicken tenders in egg wash and then drench in almond flour mixture. Spread out evenly in baking sheet.
6. Bake at 325 for 15-20 minutes until golden brown
