Mayo-less Chicken Salad
Here's a recipe for my dairy free, paleo AND whole30 chicken salad! It's great to make with leftover roast or rotisserie chicken and only gets better sitting in the fridge so is perfect for meal prep! Here's what you need:
Mayo-less Chicken Salad
INGREDIENTS
Two cooked chicken breast, shredded or diced
1/2 cup cashews soaked over night in the fridge or 2-4 hours on the counter, drain and discard soaking water
1/4 water
1 large shallot minced
1 celery rib, finely chopped
1 garlic clove, minced
Sat + pepper
INSTRUCTIONS
1. in a blender add soaked cashews, water and garlic and blend 1-2 minutes until smooth
2. in a large bowl add chicken, shallots, celery and puréed cashews, stir till combined add salt and pepper to taste
